Just as geography shapes the soul of human communities, coffee plants are influenced by nature and communicate their essence differently in each region. Quilichao de Altura coffee comes from small plots located in the department of Cauca, on the border with the Nevado del Huila mountain. This, combined with pure water sources and the fresh air that descends from the Nevado, gives Quilichao coffee the delicate flavor and aroma that make it unique.
Characteristics of Cauca coffee
Three elements characterize Cauca coffee: 1. The geography of the Cauca coffee is favorably impacted by the Colombian Massif, the Nevado del Huila, the Pacific winds, and the annual sunshine, softened by the mountains. 2. The coffee is grown in small plots, thus creating an almost personal relationship with the coffee grown. 3. The processing (from the time the beans are picked until they are dried and ready for roasting) is carried out by the farming families, with traditional artisanal know-how.
This results in a noble, delicate, and smooth coffee, yet enveloping in intense fragrance and flavor, featuring medium-high acidity, a silky body, and sweet, floral, and chocolate notes.
